This is a hand crafted washed rind cow's milk cheese that combines traits from Gouda and another Swiss variety called Appenzeller. It is available at 8 months old and in December we offer an 18 month old reserve version. It is delicately aged on cedar wood planks adding robust flavors to the cheese. It has creamy and rich flavors with sweeter overtones and distinctive eyes throughout the body of the cheese. All of the milk used comes from our family dairy farm. It pairs well with white wines such as Chardonnay and Sauvignon Blanc and also Pilsner beers.
5 Brothers Smoked:
This is a hand crafted cheese that combines traits from Gouda and another Swiss variety called Appenzeller. After one year of aging it is naturally smoked with maple and apple wood. It is creamy with sweeter overtones and has a rich smoky flavour throughout. All of the milk used comes from our family dairy farm. It pairs well with white wines such as Chardonnay and Sauvignon Blanc and also Pilsner beers.
Handeck:
This is a hand crafted washed rind cow's milk cheese that is produced using the same methods as a typical Swiss mountain style cheese. It is available at 24 months old and for December we offer a 2 - 4 year old version. It is delicately aged on cedar wood planks adding robust flavors to the cheese. It is a drier hard cheese with very rich and complex flavors and nutty overtones. All of the milk used comes from our family dairy farm. It pairs well with red wines such as Pinot Noir and also dark roasted beers.
Cheddar Cheese Curds:
These handmade cheese curds are produced fresh weekly using milk from our family dairy farm. Only small batches of curd are made and then hand cut. The natural colour and taste of the milk is reflected in the curds. They are immensely rich in flavor and their 'squeak' can be enjoyed as a great snack or melted in a number of delicious ways. These artisan made curds pair well with a variety of light and fragrant wines and beers and also with fruit based cheese jellies.
Brigid's Brie:
A soft surface ripened cheese made with cow's milk from our family farm. This brie is free of stabilizers and preservatives and thus sold with a 'best between' date for your enjoyment. Each batch is aged six weeks and is delicately handled to preserve it's creamy centre. Best enjoyed on it's own or with a flavoured jelly such as red pepper jelly. Wheels are roughly 200 grams each.
Dark Side of the Moo
This is a hand crafted cow's milk cheese that is modeled after a little known Swiss cheese called Mutchli. It is a mild creamy cheese with buttery flavors. It is first soaked for four days in Dark Side Chocolate Stout, from Woodstock's Upper Thames Brewery and then continues to age for four months. All of the milk used comes from our family dairy farm. Excellent for serving on its own, but also has wonderful melting qualities.
Tipsy:
This is our original Oxford's Harvest cheese that has been soaked in Palatine Hills Cabernet Merlot for several days. It's edible rind is rich in flavour and is a definite favourite of wine lovers.
Beaus:
This is a delicious marriage of our Oxford's Harvest cheese with Beau's All Natural Brewing of Vankleek Hill, Ontario. This sumptuous semi-soft cheese is washed every other day with a seasonal beer from Beau's.
Oxford's Harvest:
This is a hand crafted washed rind cow's milk cheese that is modeled after a little known Swiss cheese called Mutchli. It is a mild creamy cheese, developing its lightly lactic and buttery flavors after only six weeks of aging. It is delicately aged on cedar wood planks adding robust flavors to the cheese. All of the milk used comes from our family dairy farm. Excellent for serving on its own, but also has wonderful melting qualities. It pairs well with lighter white wines like Riesling and also Lager beers.

Moo Brew:
This is a hand crafted cow's milk cheese that is modeled after a little known Swiss cheese called Mutchli. It is a mild creamy cheese with buttery flavours. It is rubbed with an espresso blend from Early Bird Coffee in Woodstock and then continues to age for three months.
Crossroad Farms Sheep Milk Gouda:
This is a creamy gouda cheese that we make on behalf of Crossroad Farms using all of their sheep milk. This gouda is made in Dutch tradition and aged for six months until it's delicate flavours develop.

This is a washed rind sheep milk cheese that is made for the Hope Artisan Dairy Co-op in Alymer Ontario. This is a ten month old creamy sheep milk cheese that is similar to a Saint Paulin style cheese. It compliments well with fruit and light wines and beers.

Buffalo Bliss is a six week old soft ripened brie cheese made with creamy buffalo milk from Hope Artisan Dairy Co-Op in Alymer. Best enjoyed on it's own or with a flavoured jelly such as red pepper jelly.

Elgin Buffalo is a six month aged gouda made with creamy buffalo milk from Hope Artisan Dairy Co-Op in Alymer Ontario. Sold in cut pieces or full wheels.
